At the well-named Tivabro, or ‘House of my country’, local produce ranging from wheat to andouille (sausage) and cider is cooked and consumed!
Hemp, oak parquet flooring, stoneware dishes, stone and lime walls… The Tivabro really is in keeping with its authentic setting in the old medieval quarter of Fougères, in the ‘Place du Marchix’, in the shade of the crenelated castle walls. The dishes are also full of authenticity and you will be dazzled by the organic Breton galettes (savoury buckwheat pancakes) made with Fougères buckwheat from the ‘Moulin de la Fatigue’, filled with wonderful grated Emmental, cream and Bordier butter and andouilles (spiced sausages) from the Coglais area “local andouille which is more peppery than the Vire andouille. Our salad also comes from nearby. We really try to use local produce such as cider from Saint-Jean-sur-Couesnon”, one of 12 ciders on the menu! By the way, Tivabro means “House of my country” in Breton”. Still not convinced?
