Avel Vras, organic and fantastic

The Avrel Vras crêperie and afternoon tea-room - its name means 'Strong Wind' in Breton - offers the ultimate in great taste. Sylvie Séligour serves fresh organic produce in a contemporary setting.Enjoying an ideal position in Séné town centre, just opposite a little organic market, the Avel Vras crêperie successfully combines the twin roles of pancake house and tea-room. You'll find the same great flavours on every floor, because Sylvie Séligour fills her crêpes and galettes (savoury buckwheat pancakes) with fresh and mainly organic produce. "I buy my sausage at the market, and my little goats' cheeses too. The same goes for the vegetables and the eggs..." A total of around 20 producers, based either locally or elsewhere in Brittany, supply Sylvie's culinary needs. It's as if this modern crêperie, opened in 2011, had been chosen as a meeting place for the best suppliers. You can't leave without tasting her Parmentier galette, "a mixture of buckwheat and potato that I cook on the 'bilig' (a special hotplate for preparing galettes) to make little blinis." And what a shame, you really have to try the home-made preserves as well!
