Take for example the guinea fowl supreme with morello cherries, the pork tenderloin in honey, “pig’s cheek from the Loch valley, simmered, melting and not at all heavy", to name but a few. Do they serve fish too, in this modern house just outside Theix? "Of course," says the owner with a smile. “We even bone it so that our clients will enjoy fish we get from the small fishermen, such as sea bass, pollock and sea bream”. The sea bream, for example is served as a fillet with asparagus cream. The monkfish is served with a crab coulis. "And we only serve generous portions," Bruno Kerdal reminds you.
