Near the Aven estuary nestles a 16th century mill and ten romantic stone buildings hidden among the greenery. With their 25 years’ hotel experience, Laurent and Sandrine Rouault have just bought this little haven of peace traversed by the Belon river. In a few months, they’ve renovated the mill, the swimming-pool and the sauna, closed the grounds to traffic to set up an animal sanctuary, and refurbished the buildings in a pure contemporary spirit with Wenge wood and plain linen decor. The desire to stay as close as possible to nature whilst opting for quality materials, affects their choice of building (Ecovert label), decor and food. In his restaurant, Le Raphaël, overlooking the waterfall, Laurent’s cuisine uses locally-produced ingredients; just another reason to take a break in this lovely 25-bedroom hotel which has received a new lease of life.
