    Seventy years young, La Maison Tirel-Guérin is looking towards the future. Forget your memories, you won’t recognise this totally revolutionised institution. There's a warm welcome with a personal touch, along with a whole new menu, thanks to chef Olivier Valade. Former sous-chef at the Bernard Loiseau Relais, Olivier arrived in Brittany taking nothing for granted, and made time to meet the best local producers to offer his tasty cuisine at La Gouesnière restaurant. Come and sample Philippe Couapel’s lobster cooked in a clear iodized broth with scallops. Or his 'Coucou de Rennes' chicken, given a new twist with lightly browned salsify and lemon confit. Or the filet of turbot garnished with a potato mousse… An authentic and exciting rediscovery!
