  • Having worked in some very high-powered places, Pascal Raffray has gone for something a bit more user-friendly, to the great delight of his guests!

    Not the marshes you're thinking of! This Table des Marais (literally ‘Table in the Marsh’) lies between Saint-Malo and the Mont Saint-Michel. Now, as you will never get a chance to look inside Pascal Raffray’s kitchen yourself, we’re happy to tell you that the pork and the oysters come from Saint-Méloir, the eggs are from free-range hens reared in nearby Cherrueix, and the cider is from our friend Loïc Berthelot's Coat Albret cidery. Having worked in numerous French and American restaurants, Pascal wanted to get back to “a more user-friendly style of cooking, something the client can relate to.” And that’s just what he’s done, in this delightful converted school with its forties-style blackboard. Yet this restaurant is totally up to date when it comes to sustainable development and seasonal foods. Topped off with plenty of creativity, like this old-fashioned home-made foie gras – with crystallised chocolate – and hay-roasted sea-bass...
