Firstly, the parents: Françoise et Jean-Luc, moustachioed cook, renowned throughout gourmet Brittany. Then, their two daughters: Sandrine, wine waitress, married to Nicolas Legrand, assistant chef; and Claire, assistant chef, married to Julien Doupeux, pastry chef recently arrived in the restaurant (both of them having worked with Régis Marcon!) There is also the son, still at school ...hotel school, of course! If you have lost track, just remember that this gastronomic restaurant is right up to date. "The younger members of the family are producing dishes with the emphasis on emulsions, foams..." The lobster is embellished with a pig’s trotter jus; the langoustines, coated with tempura, are served with an artichoke cream... All in Art Deco surroundings. Inimitable and certainly not to be missed!
