    Don’t expect to find any meat at this restaurant, within Saint-Malo's historic city walls. Apart from its foie gras starter, Le Chalut is essentially a seafood restaurant. Chef Jean-Philippe Foucat offers shellfish dishes dressed with wonderfully fresh vegetables such as red chicory. Try whole just roasted sole, marinated monkfish, scallops - seared or “à la nage” in a wine and vegetable broth, or gently cooked line-caught sea-bass. Depending on the catch of the day, you may come across something really unusual like grouper in shellfish sauce, fresh haddock cooked in chicken broth or some whiting. Le Chalut offers seafood, but with surprises! And we almost forgot to mention the decor - you’ll love the long dining room shaped like the hold of a ship, complete with fishing nets and an aquarium.
