  • Lunch or dine whilst enjoying a stunning view over Saint-Malo and the baie du Prieuré (Priory Bay) in one of Dinard architectural and historical crown jewels. It is the unique experience which awaits you at the table of this unusual address, conveniently perched above the waters.

    You will enter this elegant 19th century villa and walk in the footsteps of Commandant Charcot down to the exquisite “Pourquoi Pas” (“Why not”) room named after the illustrious three-mast vessel Charcot used to explore the poles. There, you will sample the seafood dishes of Julien Hennote. Born in Dinan, Julien learnt his trade among prestigious chefs in Saint-Malo, French Polynesia, Mougins and Deauville before taking up his first chef position at the restaurant of this prestigious hotel in 2015. This 35-year-old perfectionist with a jovial disposition admits to be deeply inspired by seafood: abalones and diver-caught scallops, lobsters, seaweed, crabs including spider crabs etc. His favourite pastime is to pair those with more rustic flavours to the delight of both his faithful clientèle and passing customers. Why not try his pork sausage and blue lobster served with buckwheat and pink onion confit!
