    David Etcheverry has a good nose for things - especially anything to do with cooking. With a poetic nature and a sense of character, he knows how to bring out these characteristics in his cuisine. Try his ‘confit of foie gras’ in ‘fleur de sel’ (the finest local salt), potatoes and iced truffle with shavings of parmesan, or pressed layers of beetroot and chocolate for dessert. And what can we say about this baked line-caught sea bass on Shanghai bok choy and lemongrass or the juicy veal loin Albufera style with potatoes in sea salt? This is the cuisine of the enthusiastic connoisseur and it fits in perfectly at this recently revamped establishment in Rennes. Let it be said: the new ‘season’ is here, complete with soft curves, innovative textures, coloured seats, dashes of wood and ivory, fuchsia, green and taupe shades. Hotel rooms will soon be available, we hope!
