Since the summer of 2014, Nathalie, a former nursing auxiliary who is passionate about 'galettes' (buckwheat pancakes), has been delighting the locals and visitors to Jugon-les-lacs, a pretty village of character in the Côtes d’Armor. Her super-fresh concoctions are really special, and some of them are gluten-free.

On the delightful Place du Martray, in a stone-built house with a modern decor, there's a small temple dedicated to fine dining. Every morning, Nathalie prepares her 100% buckwheat batter. “I love the smell of this flour, which is produced at the Corouge Mill. It reminds me of the flour my grandmother used and cooked over the open fire. Her galettes are, of course, made to order and involve daring combinations of fillings: rhubarb and Camembert, goat’s cheese and pear (poached by Nathalie), smoked magret of duck and honey, Guémené andouille (white pudding) and scallops, and many more. The Suzette (hot chocolate, fresh oranges, almonds, crème chantilly and a dollop of blood-orange ice-cream) is one of her best-known signature dishes.
