  • Siblings with a passion for the local heritage, Chantal and Jacques Chaumet have managed to turn the restaurant of their spa hotel, which overlooks the Jaudy river, into one of the most creative starred eateries of the region. Within it, you will encounter the talents of head chef Stanislas Laisney who has worked there as a sous-chef for ten years.

    As you enter the attractive room with the modern decor, yours eyes will be drawn to the one-meter-high porcelain figures of two dancing Breton couples. “Manufactured by the Maison Henriot of Quimper in the 1950s, they have been in our family for a long time and are a testament of our attachment to our Breton heritage,” explains the master of the house whilst gazing at them lovingly. It is this marriage of tradition and modernity that is rediscovered with delight in the plates of Stanislas Laisney, who only works with seasonal produce that is preferably locally sourced. His “à la carte” menu changes every week depending on the local fishermen's catch. He enhances scallops by associating them with squashes and quinces, uses a concentrated jus of beef cheeks and leeks to release the cod's full flavour and whips the abalones into shape by accompanying them with a puree of salsify and a local organic cheese called “tome”... A pure delight!
