  • After training in prestigious establishments such as Le Meurice, Jean-François Pantaleon, a chef born in the Vendée region, opened his second establishment in Nantes in 2018, which quickly became an unmissable regional destination.

  • His plates are as beautiful as master paintings. The setting which is at once colourful and simple, generous and delicate, enhances the flagship produce of the Pays de Loire region. Among them, fish and shellfish are the stars of the show: langoustines from La Turballe or Les Sables-d’Olonne are shelled raw and simply pan-fried for one minute in butter, before being served with an Asian twist of fennel, ginger and soya.
