In South Finistère, one of Brittany's most dynamic terroirs, the owner of Santez Anna is one of the most active spokespeople for this movement: in his pretty, colourful den, he presents a very rich selection of regional 'bubbles', with no fewer than a hundred references that he chooses directly from the producers. His core business is selling bottles to take away, but he also opens bottles on the premises to accompany buckwheat and wheat pancakes. And, rather than indulging in (overly) fanciful recipes, he prefers to stick to classic fillings, such as egg-emmenthal-ham or salted butter caramel.
