In Cancale, a city of savours, the Guella biscuit and sweet-making factory uses traditional recipes to make its biscuits, toffees and other salted-butter sweets. From the moment you walk in, childhood memories come flooding back. In contrast with the outside of the building, the inside has a delightful 'retro' atmosphere. Second-hand furniture, family memorabilia, collections of pots and jars all add to making the ideal setting for discovering and tasting the traditionally-made produce. In front of your very eyes, the boiling hot sugar is stretched out, folded and then changes colour. The dough for the kouign-amann cake is folded again and again to make it just puffy enough.
