On the coast of Aber Wrac'h, France Haliotis opens the doors of her seaweed and abalone farm. Learn how to cook them like a chef.
It is also known as "abalone", "ear of the sea" or "sea truffle". Abalone is a refined delicacy that is highly prized by gourmets, and is strictly protected because it is becoming increasingly rare. France Haliotis raises them in deep water, respecting the seasons and the marine environment. The company organises tours to help visitors discover this unique passion. Passing through the nursery and the tanks, you'll discover the abalone and its biology, its food based on cultivated seaweed, the production methods used, as well as how the mother-of-pearl is worked and how jewellery is made. A tasty tasting session naturally concludes the visit. It is sometimes possible to combine the visit with a cookery lesson led by a chef. He'll share his tips and techniques for getting the best out of a treasure trove of raw gastronomy, which has a place of honour on some of the world's finest Michelin-starred tables.
