Artisan ice-cream maker and islander, Audrey Echard works on Brittany's largest island, with two addresses, one on the quayside of the marvellous port of Sauzon, where she also offers crêpes and galettes made from organic flours, and the other on the market square in Le Palais. The quest for excellence guides her as much in the rigorous selection of her raw materials - milk from Belle-Ile, hazelnuts from Piedmont, pistachios from Sicily, salted butter caramel from the local biscuit factory La Bien Nommée, etc - as in the artisanal, ethical and natural production - with no colourings or additives - of her ice creams and full-fruit sorbets. As well as the house's 'must-haves', Audrey also takes great pleasure in opening up the field of possibilities, with her coffee-cardamom or chai-turmeric ice creams, for example, or her avocado-mint sorbet.
