In Dinan, in the Côtes d'Armor region, Le Colibri is a charming restaurant that has revamped the 'bistro' style with a lot of charm and aptness.
"Dynamic cuisine and lively wines" is the subtitle of this restaurant in the heart of one of Brittany's most attractive towns. Against a backdrop of light-coloured wood, old stone and an astonishing natural 'fresco', the small hands of the house set the table under the glass roof of the winter garden and in the dining room open to the stoves. Two atmospheres but the same delicious cuisine! The essentials? Quality produce, seasonal of course, and preferably local. Nothing is set in stone here: the menu - like the lunchtime specials and the tasting menu - changes almost daily depending on the market and what's available. And, while respecting tradition, the chefs don't hesitate to open up the bistro possibilities, with a spring roll, red tuna and creamy dashi, saithe, tomato water, courgette and pollen, poultry confit, aubergine and miso, or an almond, strawberry and ribot milk biscuit. As for the wines, there are some good classics with a strong organic flavour.
