In his thirties, this former tennis instructor brilliantly converted to cooking. Since 2019, he and his wife Marie, who works in the dining room, have been serving top-flight Japanese-Guardian cuisine.
At the entrance to Guérande and its fortifications, Hugo and Marie Charcolin have created a place that is both artistic and warm, with paintings hanging from the stone walls and velvet chairs. In this unusual place, which used to be the stable of the Ursuline convent, they have succeeded in combining their taste for local produce and Japan. Nearly 95% of the menu comes from the local area, the rest from a Japanese-Nazarian grocery shop. On the plate, you'll find fresh peas served with a cold broth and iced sobas accompanied by mackerel from La Criée and flowers from Le Croisic. The wine list is predominantly organic. Gastronomic cuisine to savour in three, four or five courses.
