A world away from bling-bling, this Michelin-starred restaurant, located in Servon in the Manche department, embraces its terroir with great sensitivity. A nowhere else for a rare interlude!
Thomas Benady worked in Paris until one day he felt the need to leave the city behind and get closer to nature. It was on the Normandy-Brittany border that he found what he was looking for, in a former presbytery with an adjoining garden where he cultivates a fantastic vegetable patch. Much of his cooking is inspired by this garden. There's no question of compromising on seasonality for this rigorous and uncompromising chef. Every evening when the restaurant is open, he invites his guests to sample his poetic cuisine, a brilliant interpretation of the local geography, its brutality and gentleness, its calms and storms. The unique menu, with 12 or 15 courses, includes Utah Beach oysters, sucrine marinated in oyster juice and oyster concentrate, or stuffed magnolia flowers, radish, pear and rose sauce. The plates and glasses are immensely sensitive, with an extremely precise selection of natural wines, and a setting that is imposing in its simplicity and simplicity.
