With the beautiful architecture of the historic Maison Cansot, built in 1836 by a linen merchant, and a décor that blends old-world charm with a contemporary feel, the Jardin des Saveurs looks great. And the place is anything but an empty shell! After a rich career that has taken him to the Château de Locguénolé in Morbihan, the Hostellerie de la Pointe Saint-Mathieu in Plougonvelin and the Fleur de Sel in Brest, Laurent Brault has built up a very personal repertoire. His cuisine is both precise and creative, focusing on the purest expression and naturalness of locally selected ingredients. There's no question of blurring the lines with spices or cream. Taste, texture... The chef takes us on an in-depth exploration of each product: taste, for example, the abalone-artichoke duo worked in several ways, or the pig reared on straw in Plouider, combined with cockles and seaweed.
