A room with deep blue walls, subdued lighting and a view of the open kitchen: an ideal setting for discovering the delicacy and technique of chef Julien Corderoch's cooking. From his great-grandmother Louise, he inherited the pleasure of cooking, and from his fisherman grandfather, the respect for maritime resources. So it's only natural that this Michelin-starred chef has chosen to do without meat, concentrating instead on seafood and vegetables grown using permaculture methods.
