Their names are Pascaline Albicini and Marine Hervouet. They have some of the biggest names in gastronomy on their CVs: Robuchon, Vigato and Etchebest for the former, Passard and Verjus for the latter. In August 2025, we were looking forward to seeing the duo set up shop in Dol-de-Bretagne. High expectations... Promise kept! From a former roadside restaurant, the ladies have created an elegant but unassuming home, bathed in soft light and flattering contemporary wooden furniture and tastefully laid tables. Pascaline and Marine have built up a relationship of trust and proximity with some remarkable producers, market gardeners, fishermen and breeders such as Joël Poirier, whose pigeons regularly feature on their tasting menu. Constantly evolving, this menu reveals a refined and expressive cuisine, full of ideas and aptness, and stunning dishes that are further enhanced by the wines from a cellar that favours organic, biodynamic and natural methods.
