For over a decade, Sylvain Delauney has been serving traditional, market-fresh cuisine in a typical Saint-Malo house within the city walls.
The former head chef at Les Carmes in Rennes set up shop in Saint-Malo in 2014, bringing with him the Rennes-based artist MioShe to adorn the walls of his restaurant with seascape murals. Exposed beams, light-coloured wooden floors, comfortable armchairs, a dining room bathed in light – this is the place to come and enjoy some fine traditional cuisine. Three or four ingredients on each plate: dishes that are simple in concept but beautifully executed. It’s the market that inspires the chef. At lunchtime, there’s a fairly concise set menu with two starters, two main courses and two desserts at a very reasonable price. In the evening, a more extensive menu. Seared wild scallops, watercress coulis, brown butter and citrus zest. Don’t miss the chef’s Paris-Brest. As for the wine, there’s a lovely selection of natural wines sourced directly from the winemakers.
