In the little port of Damgan, between the Rhuys peninsula and the Vilaine estuary, a simple but high-quality menu focusing on wild fish.You feel like you're at the edge of the world. Aurélie Jehanno fell for this unspoilt environment 17 years ago, deciding to serve homely, organic and seasonal cuisine. She buys pollock, hake, sole, skate and cuttlefish fresh from the Vannes fish market, which are then magnified by the creativity of her chef. The seafood casserole is very successful: smoked haddock, pollock and monkfish cheeks, with some shellfish and vegetables from small producers in Séné are steam-cooked to avoid denaturing the product. Other tempting dishes include cuttlefish fillets in Armoricaine sauce, or cockles, razor clams and Bouchot mussels from Pénestin cooked in Kari Gosse. What's more? Pénerf oysters at any time of day and picnic hampers to take away!
